First off, I just have to say, I know it’s Wednesday. And last week, I said I was going to send out newsletters on Tuesday. Well, that’s proving to be a little bit harder than I expected because… Let me introduce you to my sweet new granddaughter! 🌟

She was born on Jan 25th, six days early, but she’s absolutely perfect, healthy, and wonderful. I was originally scheduled to go to Iowa on Saturday the 27th, but my daughter called me at 3:00 in the afternoon on the 25th and said, “Hey, Mom, I’m in labor!” Over the next two hours, I made good friends with a woman named Darlene from Delta who switched all my flights and got me on the Friday 5:00 AM flight to Iowa. By that time, Princess Joni was already 10 hours old, so I didn’t get to be there for the birth, but I did get there in time to give her all the newborn cuddles. 💕 (I may look a little tired in this pic!)

We’re super grateful for this healthy baby. But last week, we had a bit of a scare when my daughter had to go back to the hospital after just two days of being home due to preeclampsia. Praise God she pulled through and came home four days later.

I can admit, though, that I’m a bit groggy and trying to figure out what day it is because I have the 9:00 PM to 3:00 AM shift, which is lovely bonding time with my sweet Joni but terrible for getting anything done during the day. Hence, Wednesday. 😉

Now, can we just talk about the crazy foods you guys have eaten? I got some incredible responses that totally blew my hair back! 😄 We had a few expected ones, like snails, chicken feet, tripe, and duck liver pate. But I never expected donkey, rabbit, and guinea pig! One person even had an ostrich, another tried chocolate-covered grasshoppers, and yet another went for rattlesnake! Flying ants, hippos, giraffes, pigeons, llama burgers, camel, horse, goat, and kangaroo—wow! And get this, someone actually had iguana stew! But the one that completely threw me was fried bees. (The comment was, “The ones with stripes are better than the plain yellow ones!”) Hello! Kudos to those who’ve tried clearly foreign foods, like Balut (bravery, there!), Sago Pudding (Papua New Guinea), a 1000-year-old Chinese egg (yikes!), a Russian dish I’ve also had— holladeytz, and even… (and I couldn’t believe it) Kurut! (pronounced Kurt,) from Kazakhstan, which I tried for the first time this Christmas!

 

You guys are clearly my kind of people! 🌍
